This single serving five-minute parfait has it all: sweet, spicy, creamy, and crunchy. Make it for a quick breakfast or for a simple snack or dessert. The chewy crystallized ginger adds a nice contrast to the rich-tasting Greek yogurt. When buying mango, do not focus on the color to help determine ripeness—always judge by feel. Give the mango a gentle squeeze. A ripe mango will give under your fingers slightly, but like peaches and avocados, mango that is overly ripe will be soft. For the pecans, you can toast them in a dry skillet over medium-high heat for 2 to 3 minutes or until they start to smell toasty.
