This recipe handles 4 pounds of chicken. Use ¼ cup per pound or 2 tbsp per 5-oz skinless boneless breast or skinless thigh. We love to set up a batch of chicken in this tasty marinade the night before we cook it to let the flavor really soak in.

Ingredients

Rosemary

¼ cup(s), finely chopped

Fresh oregano

¼ cup(s), chopped

Garlic clove

6 clove(s), finely chopped

White wine vinegar

3 Tbsp

Lemon zest

1½ Tbsp

Table salt

2 tsp

Black pepper

1 tsp

Instructions

  1. In small bowl, whisk all ingredients. In resealable plastic bag, add chicken and marinade. Seal bag and turn to coat chicken. Refrigerate for up to 4 hours (or overnight for bone-in pieces).
  2. Serving size: about 2 tbsp
