These five-ingredient cookies are such a cinch to make, they'll easily become part of your regular rotation at home. They are stirred together in one bowl before being dropped onto the prepared baking sheets and baking into thin, crunchy cookies. Toasting the almonds brings out their nutty flavor. You can cook them in a dry skillet for two to three minutes or until they are toasty and smell fragrant. You’ll need one small orange to yield enough zest for these cookies. Be sure to grate the skin just through the thin bright-orange layer, avoiding the white layer, which can be bitter and negatively affect the flavor.
4 Tbsp, melted
Packed light brown sugar
Uncooked quick oats
¼ cup(s), sliced, toasted and chopped
- Heat oven to 350°F. Cover three baking sheets with parchment paper and coat with cooking spray.
- Combine all ingredients in a bowl. Drop 1/2 teaspoons of dough 2 inches apart on prepared sheets. Bake until flattened and golden brown, about 10 minutes.
- Cool completely on wire racks; carefully remove cookies from paper. Yields 1 cookie per serving.
