The classic comfort food gets kicked up with kimchi (a Korean pickled condiment made from cabbage, spices, and garlic) and balanced with cream cheese. Hitting that sweet spot of perfectly golden bread and gooey, melty cheese sometimes takes finessing! If your bread is browning too quickly, lower the heat and cover the pan to help melt the cheese without burning the bread.

Ingredients

Cooking spray

Kimchi

3 Tbsp, well-drained, chopped

Scallions

2 Tbsp, sliced

Whipped cream cheese

1 Tbsp

Reduced-calorie white bread

2 slice(s), or oatmeal or whole-wheat

Reduced fat cheddar cheese

1 oz, 3 very thin deli or packaged slices

Instructions

  1. In a small cup, combine the kimchi, scallions, and cream cheese.
  2. Top 1 bread slice with 2 slices of cheddar. Spread the cheddar with the kimchi mixture, then top with the remaining slice of cheddar and the remaining bread slice.
  3. Coat a small nonstick skillet with cooking spray and heat over medium. Add the sandwich and cook, flipping once, until the bread is lightly toasted and the cheese melts, 2 to 3 minutes per side.
  4. Serving size: 1 sandwich
