This is one of Coach Lindsey’s time-saving salads. It’s a great way to use up leftovers, so add in any leftover roasted vegetables in your fridge. Serve this with your favorite reduced-fat balsamic dressing, and a little hot sauce if you want to be as adventurous as Coach Lindsey!

Ingredients

Uncooked kale

2 cup(s), chopped

Cooked sweet potato(es)

½ cup(s), chopped

Olive oil

½ tsp, used to roast the sweet potatoes

Fresh apple(s)

½ cup(s), chopped

Reduced-fat goat cheese

¼ cup(s), crumbled

Chopped almonds

1 Tbsp

Light balsamic dressing

2 Tbsp

Hot sauce

1 splash(es), or to taste (optional)

Instructions

  1. In a large bowl, combine kale, sweet potato, apples, goat cheese, and almonds. Drizzle with dressing and hot sauce, if desired. Gently toss to combine. Serve immediately.
  2. Serving size: 1 salad
