Light cheddar cheese

½ cup(s), shredded, sharp variety, shredded

Reduced fat cream cheese (neufchâtel)

¼ cup(s), softened

Fat free mayonnaise

Jalapeño pepper

Fat free egg substitute

Cornflake crumbs

Instructions

  1. Preheat oven to 350°F. Spray baking sheet with nonstick spray.
  2. Mix together Cheddar, cream cheese, and mayonnaise in small bowl until blended well; set aside. Halve peppers lengthwise and remove seeds; fill peppers evenly with cheese mixture.
  3. Pour egg substitute into small bowl. Spread cornflake crumbs on sheet of wax paper. Dip stuffed peppers into egg substitute, one at a time, then roll in cornflake crumbs until coated, transferring stuffed peppers to prepared baking sheet; spray with nonstick spray. Bake until filling is bubbly and lightly browned, about 30 minutes. Serve hot or warm.
