Reduced fat cream cheese (neufchâtel)

Fat free mayonnaise

Jalapeño pepper

Instructions

Preheat oven to 350°F. Spray baking sheet with nonstick spray.

Mix together Cheddar, cream cheese, and mayonnaise in small bowl until blended well; set aside. Halve peppers lengthwise and remove seeds; fill peppers evenly with cheese mixture.

Pour egg substitute into small bowl. Spread cornflake crumbs on sheet of wax paper. Dip stuffed peppers into egg substitute, one at a time, then roll in cornflake crumbs until coated, transferring stuffed peppers to prepared baking sheet; spray with nonstick spray. Bake until filling is bubbly and lightly browned, about 30 minutes. Serve hot or warm.
