This easy, no-cook sandwich combines classic Italian ingredients for an easy lunch or light dinner that’s ready in under 10 minutes. This sandwich is smeared with a homemade pesto for intense, fresh flavor. If you’re not a fan of pesto, try balsamic vinegar with a little salt and pepper or a spicy mustard on your sandwich—both are flavorful and add minimal additional calories. Let the sun-dried tomatoes soak for 30 minutes until they are soft and pliable, and then pat them dry before adding them to your sandwich. Swap in arugula for the lettuce to add a peppery bite.
Ingredients
Fresh basil
2 Tbsp, chopped
Pine nuts (unsalted, raw or dry roasted, no sugar added)
½ oz, about 1 1/3 tbsp, toasted
Jarred minced garlic
½ tsp
Olive oil

Hard roll

Part skim mozzarella cheese
1½ oz, thinly sliced
Tomato
2 small, plum, thinly sliced
Lettuce
1 cup(s), chopped, mixed leaves, washed, dried and roughly torn
Sun-dried tomatoes (without oil)
½ cup(s), soaked in hot water and cut in half
Instructions

Combine basil, pine nuts, garlic and oil and blend in a food processor until smooth. Spread rolls evenly with sauce.

Top each roll with equal amounts of cheese, tomatoes, lettuce and sun-dried tomatoes.
