We give these mini egg muffins an Italian-spin but you can easily customize them with other ingredients. Go Greek with crumbled feta, dill, and tomato. Or give them Mexican flavor with reduced-fat cheddar, tomatoes, and jalapeno. Just make sure not to go overboard with the quantity of add-ins or your egg bites could spill out of the silicone cups.

Ingredients

Egg

2 large egg(s)

Table salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Shredded part skim mozzarella cheese

2 Tbsp

Roasted red peppers (packed in water)

1 Tbsp, diced

Fresh basil

½ Tbsp, minced

Pesto sauce

4 tsp

Instructions

  1. Preheat DASH Egg Bite Maker for 2-3 minutes. Meanwhile, beat eggs in a small bowl; season with a pinch of salt and pepper (optional). In a mug, combine cheese, red pepper, and basil.
  2. Fill 1 DASH silicone cup with water and pour into Egg Bite Maker; place all 4 silicone cups in Egg Bite Maker. Evenly divide cheese mixture among cups; divide egg mixture over top. Cover; let sit until cooked through, about 7-10 minutes.
  3. Remove egg bites from cups; serve each with 1 tsp pesto spooned over top.
  4. Serving size: 1 egg bite
