This single-serving mason-jar soup is an excellent portable lunch or quick dinner option. It is warming, comforting, flavorful, and ready in minutes. Do be sure to let it sit after adding in the boiling water so that the concentrated tomato paste and the savory chicken base have time to dissolve fully and permeate the rest of the ingredients. If you would like to add even more flavor, stir in some hot sauce to taste or freshly grated ginger or minced garlic. A lemon wedge, squeezed on top and stirred in just before you eat, adds brightness and lifts every bite.

Harissa paste

Canned diced tomatoes
¼ cup(s), drained
Canned chickpeas (low sodium)
¼ cup(s), rinsed
Spinach
¾ cup(s), torn
Uncooked whole wheat couscous

Lemon
⅛ item(s), medium, wedge
Water
2 cup(s), boiling
Instructions

In a pint-sized mason jar or container with a tight-fitting lid, layer ingredients in order listed, except for lemon wedge. Wrap lemon wedge in plastic wrap; place on top. Close jar; refrigerate until ready to use.

Remove and set aside lemon wedge; fill jar with boiling water (about 2 cups). Stir very well, until tomato paste and soup base are fully dissolved. Close jar; let sit 5 minutes.

Remove lid and squeeze lemon juice into soup; stir once.
