Best of all, you can easily customize it to fit a range of tastes by mixing and matching cookie types, ice cream flavors, and toppings. For example, pair chocolate sandwich cookies with cookies and cream ice cream and chocolate sprinkles or, for a Key lime pie-inspired treat, try sugar cookies filled with lime sherbet and topped with crumbled graham crackers. - Place sprinkles on a plate. Spoon 2 Tbsp ice cream on a cookie; top with another cookie to make a sandwich. Quickly roll edges of ice cream sandwich in sprinkles; wrap in plastic wrap and freeze for at least 1 hour.
- Repeat with remaining ingredients to make 4 ice cream sandwiches.
