Despite a simple method and just a handful of ingredients, these pretty, lace-like cheese crisps deliver big on flavor and are ready in just 15 minutes. For variety, swap basil for chives and add fresh minced garlic, or add crushed fennel seeds and red pepper flakes to the cheese instead. Using a high-quality Parmesan cheese that you grate yourself has a very big impact on the flavor of this recipe. The extra effort and expense are worth it. Serve these crisps with salad or crumble into soup or over a vegetable side dish; they are sure to steal the spotlight from the main dish.

Ingredients

Parmesan cheese

4 oz, such as Parmigiano-Reggiano, finely shredded (about 1 1/2 cups)

Chives

2 Tbsp, fresh, minced

Fresh parsley

2 Tbsp, fresh, minced

Black pepper

½ tsp, freshly ground

Instructions

  1. Preheat oven to 425ºF. Line two cookie sheets with parchment paper (or coat with cooking spray).
  2. Place scant tablespoons of cheese on prepared pans, about 1 1/2- to 2-inches apart. Flatten out each pile of cheese into an oval shape; sprinkle with herbs and pepper. Bake until cheese crisps turn golden and resemble lace cookies, 5 to 6 minutes. Cool on pan until set and then remove to wire rack to cook completely.
