This fancy breakfast sandwich is a cinch to make. You can get two skillets going on the stovetop and have this ready in 10 minutes or less. Place the Canadian bacon in one skillet to brown, which will add lots of flavor to the final sandwich, and let it cook over medium-high heat for a couple minutes on each side. (You can also cook the Canadian bacon in the microwave, if you like. Place it on a microwave-safe plate, and cook it at 50% power for about 30 seconds or until heated through.) Meanwhile, start your eggs in another pan. Scramble them over medium heat to prevent them from overcooking.

Mini plain croissants

Cooked Canadian bacon

1 oz

Egg

1 large egg(s), scrambled with cooking spray, salt and pepper

Chives

1 tsp, chopped

Instructions

  1. Cut croissant open in half, top with bacon and scrambled eggs; garnish with chives.
