This sandwich tastes like fall, with fresh diced apple and convenient canned cranberry sauce as the base for a simple stir-together ham salad. Plus, it is ready in just 15 minutes. Use your favorite apple variety in the mix; Honeycrisp, Gala, or Granny Smith would all be tasty substitutes. The fresh radicchio leaves add a complementary spicy, bitter hit. For something milder, you can use crisp butter lettuce or fresh spinach or romaine lettuce. Pumpernickel bread, a dense, slightly sweet rye bread, is the perfect partner for the other flavors in this sandwich. Substitute lean turkey for the ham, if you like.

Instructions

  1. Stir together ham, apple, cranberry sauce, mustard, and scallion.
  2. Lay 2 pieces of bread on a cutting board and divide ham salad between them. Top with radicchio leaves and second slice of bread.
