Grilled watermelon salad with goat cheese

This refreshing sweet and savory salad combines sweet watermelon, peppery arugula, creamy goat cheese, and crunchy pumpkin seeds. The flavors are brought together with the drizzle of a store-bought balsamic glaze. Grilling the watermelon caramelizes the melon, giving it a sweet and smoky flavor. The watermelon slices can be cut a day ahead and refrigerated. Serve alongside pasta or grilled pork, chicken, or fish.

Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to high, or prepare high fire in charcoal grill. Grill watermelon slices until lightly charred, 10 to 20 seconds per side.

In medium bowl, toss arugula and oil and season with salt and black pepper. Arrange 1 watermelon slice each on 4 small plates. Sprinkle each with 2 tbsp cheese. Top each with another watermelon slice, then top with arugula. Dividing equally, drizzle with balsamic glaze and sprinkle with pumpkin seeds.
