Enjoy the shrimp straight off the skewers or chop and add them to salads, rice bowls, or tacos.

Ingredients

Olive oil

1 Tbsp

Garlic

2 clove(s), minced

Lemon zest

2 tsp

Ground cumin

½ tsp, or to taste

Table salt

1 pinch(es), or to taste

Uncooked shrimp

32 medium

Fresh lemon juice

2 Tbsp

Instructions

  1. In a shallow serving bowl, combine the oil, garlic, lemon zest, cumin, and salt. Add the shrimp, toss to coat, and let sit for 30 minutes.
  2. Preheat grill to medium.
  3. Thread 4 shrimp onto each of 8 wooden or metal skewers. Sprinkle the skewers with the lemon juice and grill until the shrimp turn opaque and are cooked through, about 2 minutes per side.
  4. Serving size: 8 shrimp

Notes

Make sure to soak wooden skewers in water for 20 to 30 minutes before use to prevent charring.
