In a shallow serving bowl, combine the oil, garlic, lemon zest, cumin, and salt. Add the shrimp, toss to coat, and let sit for 30 minutes.

Preheat grill to medium.

Thread 4 shrimp onto each of 8 wooden or metal skewers. Sprinkle the skewers with the lemon juice and grill until the shrimp turn opaque and are cooked through, about 2 minutes per side.
