Ingredients
Tomato
2 medium, cut into halves
Olive oil
1 tsp
Shallot
1 small, finely chopped
Fresh thyme
2 tsp
Jennifer Fisher Spicy Salt
½ tsp
Grated Parmesan cheese
¼ cup(s)
Instructions

Heat the grill on medium-high. Brush the cut sides of tomatoes with the oil. Arrange tomato halves, cut sides up, on the hot grill.

Sprinkle the tomatoes with the shallots, thyme, and Spicy Salt. Cook tomatoes until grill marks appear. Turn tomatoes over. Cook until grill marks appear.

Turn tomatoes cut sides up again and sprinkle with half of the Parmesan. Turn over to melt the cheese. Turn tomatoes cut sides up again and sprinkle with remaining Parmesan. Turn over to melt the cheese. Remove tomatoes from the grill. Season with additional Spicy Salt, if desired.
