Whether you're looking for a little something sweet yet healthy to serve after dinner or a fruity side dish, this recipe is certain to be a favorite. It's perfect to serve if you are already cooking your dinner on the grill. Lime and mint enhance the fruity flavor of the pineapple. When selecting a pineapple for grilling at the grocery store, smell the bottom of the pineapple. If it smells like a pineapple, then that means it's ripe and an excellent selection. Or, to make this recipe even easier, buy the pineapple already prepped from your supermarket's produce department.
1 medium, peeled and cored
1 tsp, grated
Fresh lime juice
Fresh mint leaves
1 Tbsp, chopped

- Spray grill rack with nonstick spray. Preheat grill to medium-high or prepare medium-high fire.
- Cut pineapple into 12 slices. Lightly spray with nonstick spray.
- Place pineapple on grill rack and grill, turning occasionally, until browned and tender, about 12 minutes.
- Arrange pineapple on serving tray, drizzle with lime juice, and sprinkle with lime zest and mint. Serve warm or at room temperature with lime wedges.
