Whether you're looking for a little something sweet yet healthy to serve after dinner or a fruity side dish, this recipe is certain to be a favorite. It's perfect to serve if you are already cooking your dinner on the grill. Lime and mint enhance the fruity flavor of the pineapple. When selecting a pineapple for grilling at the grocery store, smell the bottom of the pineapple. If it smells like a pineapple, then that means it's ripe and an excellent selection. Or, to make this recipe even easier, buy the pineapple already prepped from your supermarket's produce department.

Cooking spray

Pineapple

1 medium, peeled and cored

Lime zest

1 tsp, grated

Fresh lime juice

2 Tbsp

Fresh mint leaves

1 Tbsp, chopped

Lime

½ item(s), cut into 4 wedges

Instructions

  1. Spray grill rack with nonstick spray. Preheat grill to medium-high or prepare medium-high fire.
  2. Cut pineapple into 12 slices. Lightly spray with nonstick spray.
  3. Place pineapple on grill rack and grill, turning occasionally, until browned and tender, about 12 minutes.
  4. Arrange pineapple on serving tray, drizzle with lime juice, and sprinkle with lime zest and mint. Serve warm or at room temperature with lime wedges.
