It takes just a few minutes and three simple ingredients to have a sweet and healthy dessert or snack. As the pineapple starts to caramelize on the grill, the natural juices come out. This recipe serves one so multiply it for as many you need. For the best flavor, purchase a whole pineapple and use a freshly cut pineapple for this recipe. To peel and core a pineapple, place it on its side to cut the top and base. Stand the pineapple upright to cut off the skin around the outside of the pineapple. Cut the pineapple into slices and pull out the core of each slice with a small paring knife.

- Cook pineapple in nonstick grill pan over medium heat, turning once, until lightly browned, about 4 minutes. Transfer to plate and top with chocolate and coconut.
