It turns out that boiling isn’t the only way to cook pasta—you can grill it, too! Refrigerated tortellini is an ideal candidate to cook over flames. You don’t need to precook it or parboil it; simply skewer it with veggies and sausage and cook over coals. The pasta ends up wonderfully crisp, and the cheesy filling gets warm and soft. If you’re using bamboo skewers, make sure to soak them in water for about 30 minutes before threading on the ingredients.

Coat an outdoor grill rack with nonstick spray. Prepare grill to medium-high heat.

In a medium bowl, toss tortellini with olive oil to coat. In another medium bowl, combine tomatoes, zucchini, bell pepper, and mushrooms. Coat vegetables with nonstick spray, tossing to coat evenly. Sprinkle with Italian seasoning and salt; toss to coat.

Onto 8 (12-inch) skewers, alternately thread tortellini, vegetables, and sausage. Lightly coat skewers with nonstick spray. Arrange skewers on grill rack; grill until lightly charred, 4 to 5 minutes per side.
