Grilled corn tastes awesome on its own, but in Mexico, it’s spiced up with chile, cheese, and lime. The smoky ears are a popular street food, but they’ll be enjoyed just as much at your next backyard barbecue.no

Ingredients

Cooking spray

Corn on the cob

4 ear(s), medium

Light mayonnaise

¼ cup(s)

Cilantro

¼ cup(s)

Plain fat free Greek yogurt

2 Tbsp

Lime zest

½ tsp

Ancho chile powder

½ tsp, plus more to taste

Garlic

¼ tsp, minced, minced

Crumbled feta cheese

4 Tbsp, or shredded Cotija cheese

Lime

Instructions

  1. 1 Spray grill rack with nonstick spray. Preheat grill to medium or prepare medium fire.
  2. 2 Lightly spray corn with olive oil nonstick spray. Place corn on grill rack and grill, turning occasionally, until tender and lightly charred, about 12 minutes.
  3. 3 Meanwhile, stir together mayonnaise, cilantro, yogurt, lime zest and juice, 1/2 teaspoon ancho chile powder, and the garlic in small bowl.
  4. 4 Brush grilled corn with mayonnaise mixture. Sprinkle evenly with Cotija and additional chile powder to taste, if desired. Serve with lime wedges.
