Don’t underestimate the appeal of simple grilled chicken tacos. This version, made with spice-rubbed chicken breasts and grilled scallions, is sure to please the entire family.

Ingredients

Cooking spray

Uncooked skinless boneless chicken breast

Chili powder

1 tsp

Kosher salt

½ tsp

Garlic powder

½ tsp

Scallions

8 medium

Corn tortilla

8 tortilla(s), medium, warmed

Guacamole

1 cup(s)

Salsa

½ cup(s)

White onion

½ cup(s), chopped, optional

Cilantro

¼ cup(s), chopped

Instructions

  1. Coat a grill rack with cooking spray and preheat the grill to medium-high. Alternatively, coat a grill pan with cooking spray and heat over medium-high.
  2. Coat the chicken evenly with the chili powder, salt, and garlic powder; coat the chicken with cooking spray. Arrange the chicken evenly on the grill rack or grill pan; close the grill lid or loosely cover the grill pan with foil and grill until the chicken is cooked through, 5 to 6 minutes per side.
  3. Coat the scallions with cooking spray and add to the grill rack or grill pan; grill until lightly charred, about 3 minutes, turning occasionally.
  4. Chop the chicken and scallions. Divide the chicken and scallions evenly among the tortillas; add 2 tbsp guacamole, 1 tbsp each salsa and white onion (if using), and ½ tbsp cilantro to each taco.
  5. Serving size: 2 tacos

Notes

If you’re firing up an outdoor grill, take advantage of the large cooking surface and char the corn tortillas on the grill, cooking for 15 to 30 seconds per side.
