Grilled Baby Bok Choy with Lime Butter

Give this veggie a New American spin by flavoring it with fresh lime butter instead of the usual Asian spices. Grill the bok choy for crispy leaves and stalks that are tender. Baby bok choy is more tender than regular-sized bok choy, but if you can only find regular-sized bok choy, increase the grilling time to 7 to 8 minutes per side. The difference between baby and regular bok choy is that the baby bok choy is harvested earlier, which produces smaller leaves. It's also sweeter than regular bok choy. Serve bok choy as a side to grilled steak.

Cooking spray

Uncooked bok choy
3 pound(s), baby variety, halved lengthwise
Unsalted butter
1½ Tbsp, or salted, melted
Olive oil
1½ Tbsp
Lime zest
1 Tbsp, grated
Garlic
1 large clove(s), passed through a garlic press
Table salt
¾ tsp
Black pepper
¼ tsp
Chives
3 Tbsp, snipped

Off heat, coat a grill rack with cooking spray. Preheat grill to medium heat

Off heat, generously coat bok choy with cooking spray; season to taste, if desired. Grill bok choy, 4 minutes; flip and cook until grill marks are evident and stalks are tender, 4–6 minutes more. Transfer to a serving platter.

Combine butter, oil, lime zest, garlic, salt and pepper in a large bowl; toss to coat. Drizzle over grilled bok choy and sprinkle with chives; serve with lime wedges.
