Ordinary white rice turns into a treat when it’s flavored with roasted poblano, cilantro, and lime. Sprinkle it with thinly sliced scallions and chopped fresh cilantro to add even more green!

Ingredients

Poblano pepper

1 medium

Canola oil

2 tsp

Scallions

3 medium, thinly sliced

Garlic

2 clove(s), finely chopped

Uncooked white rice

1 cup(s)

Vegetable broth

2 cup(s), or chicken broth

Table salt

1¼ tsp

Fresh parsley

½ cup(s), lightly packed

Cilantro

½ cup(s), lightly packed

Fresh lime juice

Instructions

  1. 1 Preheat broiler. Line bottom of broiler pan with foil. Place poblano in prepared pan. Broil 5 inches from heat, turning occasionally, until skin blisters, about 15 minutes. Wrap poblano in foil and let steam about 15 minutes. When cool enough to handle, peel poblano, remove seeds and stem, and chop. Set aside.
  2. 2 Meanwhile, heat oil in medium saucepan over medium heat. Add scallions and cook, stirring often, until softened, about 2 minutes. Add garlic and cook, stirring constantly, until fragrant, about 30 seconds. Add rice and stir to coat grains. Add broth and salt; bring to boil. Lower heat, cover, and simmer until liquid is absorbed and rice is tender, about 15 minutes.
  3. 3 Remove pan from heat and let stand, covered, about 5 minutes.
  4. 4 Place poblano, cilantro, parsley, lime juice, and water in blender or food processor; puree. Add poblano mixture to rice and stir to combine.
  5. Serving size: (generous 1/2 cup)
