This dip is kind of like guacamole minus the avocado and can be prepared in just 15 minutes. Filled with onions, tomatoes, and baby peas, this tasty appetizer also gets a citrusy flavor from fresh lime juice and a taste of heat from hot pepper sauce. Serve with baked tortilla chips or fresh vegetable sticks, or use as a sandwich spread. You can make this pea dip a day ahead and store in the refrigerator in an airtight container. If you are entertaining, make a trio of dips with the pea dip, hummus and a beet dip for a colorful presentation.


Ingredients
Frozen baby peas
10 oz
Olive oil
1 Tbsp
Fresh lime juice
1 Tbsp
Ground cumin
0.75 tsp
Table salt
0.5 tsp
Plum tomato
1 medium
Red onion
2 Tbsp, chopped
Cilantro
3 Tbsp
Hot pepper sauce
0.25 tsp

Bring a small saucepan half full of water to a boil. Add peas; cook until tender, about 4 to 5 minutes. Drain peas and rinse under cold running water; drain again.

Put peas, oil, lime juice, cumin and salt in a food processor; process until smooth and scrape into a bowl. Stir in tomato, onion, cilantro and hot pepper sauce; cover and refrigerate at least 15 minutes for flavors to blend. Let come to room temperature before serving. Yields about 3 tablespoons per serving.
