Ingredients

Uncooked sweet potato

1 medium, scrubbed

Vegan feta cheese

1 Tbsp, crumbled

Scallions

1 medium, thinly sliced on an angle

Dill

2 tsp, finely chopped

Pepperoncini

3 item(s), whole, drained and finely chopped

Jennifer Fisher Spicy Salt

¼ tsp

Olive oil

½ tsp

Instructions

  1. Preheat oven to 350°F. Pierce the potato all over and place on a small baking sheet. Roast until tender, about 40 to 45 minutes.
  2. With the tip of a knife, cut the potato lengthwise to create a slit. Carefully spread the potato open. Top with the feta, scallions, dill, and pepperoncini. Season with the Spicy Salt and drizzle with the oil.
