Roast cherries tossed with brown sugar and stir in vanilla seeds for a fruity, sweet topping for Greek yogurt. Roasting the cherries caramelizes them, which intensifies their flavor. It also changes the texture of the cherries, making them chewier. It makes an excellent dessert or tasty breakfast dish. When selecting cherries at the grocery store, look for cherries with green stems that are firm. Store them in the refrigerator until ready to use. They can lose quality quickly at room temperature so put them in the refrigerator as soon as you get them home from the store.

Instructions

Preheat oven to 450°F. Line a large baking pan with aluminum foil; lightly coat with cooking spray.

Spread cherries on prepared pan and toss with sugar. Roast, stirring once or twice, until wilted and juices are starting to brown, 25-30 minutes.

Spoon roasted cherries and juices into a bowl; stir in vanilla seeds. Serve at room temperature over yogurt.
