In just 7 minutes you can make a tasty chicken salad filled with delicious Greek flavor. Kalamata olives, red onion, tomato, and cucumbers are some of fresh ingredients that make this chicken salad so special. Fat free yogurt serves as the base of this dressing that gets it's great flavor from mint, dill, lemon and garlic. The dressing can be made ahead and refrigerated. You could turn this delicious and nutritious salad into a sandwich by adding couple slices of whole-wheat bread.

Ingredients

Plain fat free yogurt

Peppermint leaves

3 Tbsp, chopped

Dill

3 Tbsp, fresh, chopped

Lemon

Garlic

Roasted skinless boneless chicken breast

Romaine lettuce

Instructions

  1. To make the dressing, whisk together the yogurt, mint, dill, lemon zest and juice, garlic, and oil in a small bowl.
  2. Toss together the chicken, lettuce, tomatoes, cucumber, and onion in a serving bowl. Drizzle the yogurt dressing over the salad and toss to coat. Sprinkle with the olives and feta. Yields generous 1 1⁄2 cups per serving.
