Greek-ish Meatballs with Lemony Yogurt

Uncooked zucchini

Uncooked ground beef sirloin 90% lean

12 oz

Fat free feta cheese

½ cup(s), crumbled

Scallions

4 medium, thinly sliced, whites and dark green parts separated

Kosher salt

1 tsp, divided

Black pepper

Plain fat free Greek yogurt

⅔ cup(s)

Fresh lemon juice

Frozen corn

½ cup(s), thawed and warmed

Preheat oven to 425°F. Line 2 sheet pans with foil or parchment. Spray with cooking spray.

Coarsely grate the zucchini to get 1/3 cup. Dice the remaining zucchini and place on 1 prepared pan. Spray zucchini with cooking spray and season with 1/4 tsp salt. Place in oven and roast 20 minutes, until tender and browned.

In a medium bowl, combine the beef, feta, white parts of the scallion, 1/3 cup grated zucchini, 1/2 tsp salt, and pepper. Form into 1 1/2-inch balls and arrange on remaining prepared pan. Spray tops with cooking spray. Roast 15 minutes, until cooked through.

Meanwhile, stir together the yogurt, dark green scallion slices, lemon juice, and 1/4 tsp salt.

Combine the corn and some of the zucchini. Top with meatballs and yogurt sauce.
