Baked grapefruit in a dessert? Yes indeed! And it's so delicious, you'll want to save some for breakfast the next day. The tart flavor of the grapefruit mixes beautifully with the sweetness of the apples. Tapioca, ginger, and allspice mix together to enhance the flavor of this dish. Oatmeal, brown sugar, flour, butter and cinnamon make a crispy and delicious crust that cooks to a golden brown. We found it easiest to peel the grapefruit if we first cut the tops and bottoms of the fruit. The peel and pith easily are removed from this point. Serve this plain or with a scoop of ice cream.

3 medium, pink preferred

2 medium, such as Granny Smith, peeled and thinly sliced

Uncooked tapioca

2 Tbsp

Ground ginger

½ tsp

Ground allspice

¼ tsp

Packed light brown sugar

¾ cup(s)

Uncooked oatmeal

½ cup(s)

All-purpose flour

½ cup(s)

Salted butter

6 Tbsp, softened

Ground cinnamon

½ tsp

  1. Preheat oven to 350°F. Remove peel and white skin (pith) from outside of grapefruits. Cut into 3/8-inch-thick rounds, blot slices on a paper towel to absorb some juice and place in a 9 X 9-inch square baking pan. Add apples, tapioca, ginger and allspice; toss to combine and spread evenly in pan.
  2. Using an electric mixer or mixing by hand, beat sugar, oatmeal, flour, butter and cinnamon until clumps are the size of pebbles; evenly sprinkle over fruit. Bake until fruit bubbles and top is golden brown, about 45 minutes. Cut into 12 pieces and serve warm or at room temperature.
