Better than delivery, your whole family will love this tasty pizza. The sweetness of the caramelized onions in this pizza contrasts wonderfully with the bitterness of the spinach, richness of the tomato and pungency of the cheese. The sweet flavor of the caramelized onions makes a perfect pairing with the salty gorgonzola cheese. When caramelizing the onions, if they start to stick to the pan, you can add a splash of water. If you have fresh herbs on-hand such as rosemary or thyme, you can also add them to the pizza for added flavor.

Ingredients

Onion

2 large, vidalia , thinly sliced

Pizza dough mix

12 oz

Sun-dried tomatoes (without oil)

10 piece(s)

Hard or semi-soft cheese

3 oz, Gorgonzola

Spinach

10 leaf/leaves, washed and dried

Black pepper

tsp, or to taste

Instructions

  1. Coat a large nonstick pan with cooking spray. Warm pan over medium heat. Add onions and reduce heat to medium-low. Cook for 15 to 20 minutes, stirring frequently, until onions brown and become very fragrant.
  2. Meanwhile, prepare pizza crust for baking according to package directions. Mince tomatoes and crumble cheese. Tear spinach into pieces. Preheat oven to 425°F.
  3. Spread caramelized onions on pizza crust and bake for 12 minutes. Remove from oven and add tomatoes, spinach and cheese. Bake until cheese is melted, about 3 more minutes. Season with freshly ground black pepper and serve.
