Mix together goat cheese, parsley and garlic and top it on crusty French bread slices for a tasty appetizer. Broiling until the cheese just begins to brown, 1 to 2 minutes, will enhance the flavor. Although these Tuscan-style toasts are delicious as they are. If you don’t broil the crostini, they can be made 15 to 20 minutes ahead.Chervil, a member of the parsley family, has a mild anise flavor; if you like, substitute an equal amount for the parsley. For a flavor boost, use roasted garlic if you have some on hand.

Ingredients

Semisoft goat cheese

¼ cup(s)

Fresh parsley

1 Tbsp, chopped flat-leaf

Black pepper

tsp, freshly ground

Garlic

1 clove(s), peeled

Olive oil

1 tsp

French bread

1 loaf/loaves, medium, 8 (1/2 inch thick) slices, toasted

Instructions

  1. In a small bowl, combine the goat cheese, parsley, and pepper. Press in the garlic with a garlic press, then add the oil and mix until smooth. Spread on the baguette slices.
