In Italy, a most-beloved treat is a brioche roll split and filled with lemon sorbet. Dessert doesn't get easier to make than with this two-ingredient treat. The flavor of gingerbread marries perfectly with the lemon sorbet that will just melt in your mouth. You can freeze this dessert ahead and have them for a snack, a special weeknight dessert or for entertaining. If you want to elevate this dessert even further, you can make your own sorbet for the dessert.

Gingersnap cookie

With a small ice-cream scoop or spoon, place 2 tablespoons of the sorbet on the bottom of each of 8 of the cookies. Top with the remaining cookies, bottom side down, pressing down lightly to spread the sorbet. Place the sandwiches on a plate in one layer. Cover tightly with plastic wrap and freeze until the sorbet is hard, at least 2 hours or up to 1 day. Yields 2 sandwiches per serving.
