Ginger chicken & pineapple stir-fry

Combine tender pieces of chicken with pineapple, scallions and sweet peppers and an Asian-inspired sauce for a delicious weeknight dinner. Garlic, ginger, five-spice powder, and soy sauce bring a tangy flavor to the sweetness of the pineapple. Five-spice powder is an Asian seasoning that combines a variety of flavors that includes sweet, sour, bitter and salty. It makes an excellent marinade or rub. This entire dish cooks in a single pan, making clean-up easy. Make the meal complete by serving the stir-fry with brown rice.


Ingredients
Uncooked skinless boneless chicken breast
1 pound(s), cut into strips
Table salt
¼ tsp
Canola oil
4 tsp, divided
Scallions
3 medium, sliced on diagonal (plus extra for garnish)
Pineapple
1½ cup(s), cut into 1-inch cubes
Red bell pepper
1 medium, cut into 1-inch pieces
Serrano chili pepper
1 average, seeded and minced (red or green)
Garlic
2 clove(s), minced
Fresh ginger
1 Tbsp, minced
Five-spice powder
½ tsp
Less sodium soy sauce
2½ Tbsp
Instructions

Sprinkle chicken with salt. Heat 2 tsp oil in wok or large skillet over medium-high heat. Add chicken, in batches, and stir-fry until cooked through and well browned, about 5 minutes. Transfer to plate. Add remaining 2 tsp oil to wok. Add scallions, pineapple, bell pepper, and chile, and stir-fry until vegetables are crisp-tender, about 3 minutes.

Add garlic, ginger, and five-spice powder and stir-fry until fragrant, about 1 minute. Add chicken and soy sauce to wok and stir-fry 1 minute. Remove from heat and sprinkle with remaining scallion.
