Garlicky Spinach & Fontina Pizza

Much better than delivery pizza or a pizza from the freezer section of the grocery store, this pizza is filled with fresh ingredients and boasts a delicious homemade flavor. Not your average pizza, this flavorful vegetarian version will please everyone. Spinach sautéed in garlic, artichokes and olives topped with fontina cheese pair perfectly in this delicious one-dish meal. Provolone or gouda could also be substituted for the fontina cheese. Be sure that the oven is completely preheated before cooking the pizza. Serve the pizza on its own as a one-dish meal or with a tossed salad.

Ingredients

Garlic

2 clove(s), minced

Water

2 Tbsp

Baby spinach

8 oz

Whole wheat thin pizza crust

1 item(s), pre baked

Cooked artichoke hearts

½ cup(s), marinated, rinsed, drained, and chopped

Olives

6 olive(s), large, Kalamata, pitted and sliced

Fontina cheese

1 cup(s), shredded, shredded

Preheat oven to 450°F. Spray baking sheet with nonstick spray.

Spray medium nonstick skillet with nonstick spray and set over medium heat. Add garlic and cook, stirring constantly, until fragrant, 30 seconds. Add water and spinach, in batches, if necessary, and cook, stirring constantly, until spinach wilts and liquid has evaporated, about 2 minutes.

Place crust on baking sheet. Top crust evenly with spinach, artichokes, and olives. Sprinkle evenly with fontina. Bake until cheese has melted, about 8 minutes. Cut into 6 wedges. Yields 1 wedge per serving.
