Fresh and green, pesto makes a delicious addition to a variety of recipes. Garlic scapes add a bright, light taste to traditional pesto. Our version has a new twist on this favorite by using sliced almonds instead of pine nuts and part-skim ricotta cheese in place of Parmesan cheese. Olive oil holds all the ingredients of this Italian favorite together. Serve this spread on sandwiches, toss it with pasta, use it as a sauce on top of pizza or use it to prepare a variety of dishes. A food processor makes preparing this pesto a quick and easy process.

Ingredients

Fresh basil

2 cup(s), leaves

Fresh garlic scapes

2 medium, cut into 1-inch pieces

Olive oil

2 Tbsp

Sliced almonds

2 Tbsp

Part skim ricotta cheese

2 Tbsp

Table salt

¼ tsp

Black pepper

¼ tsp, freshly ground

Instructions

  1. 1. Place basil, garlic scapes, olive oil, almonds, cheese, salt and pepper in a large food processor. Cover and process until smooth, scraping down inside of canister once or twice. Scrape pesto into a small bowl. To keep pesto from turning brown, press a piece of plastic wrap right against its surface before refrigerating for up to 4 days. Serving size: 2 Tbsp
