Ingredients
Self-rising flour
1 cup(s)
Plain fat free Greek yogurt
1 cup(s)
Salted butter
2 tsp, melted and divided
Jarred minced garlic
2 Tbsp
Uncooked skinless boneless chicken breast
3 oz
Fresh parsley
1 tsp
Tzatziki (cucumber yogurt sauce)
2 Tbsp
Red onion
¼ cup(s), chopped
English cucumber
½ medium, spiralized
Tomato
¼ cup(s)
Arugula
¼ cup(s)
Crumbled feta cheese
1 tsp
Sriracha hot sauce
1 tsp
Instructions
1
Preheat oven to 375°F. Line a baking sheet with parchment.
2
In a large bowl, combine the flour and yogurt. Stir together, then knead the dough in the bowl with hands for 2 to 3 minutes, until smooth. If the dough is too sticky, sprinkle with additional 1 tsp flour.
3
On the prepared baking sheet, roll and stretch the dough into a 10-inch circle. Bake 18 to 22 minutes, or until dough is cooked through. Brush the top of the flatbread with 1 tsp melted butter and sprinkle with 1 tbsp garlic.
4
Meanwhile, in a small nonstick skillet, heat the remaining 1 tsp butter and 1 tbsp garlic over medium. Add the chicken and cook 3 to 4 minutes per side, or until cooked through. Sprinkle in the parsley.
5
Spread the tzatziki sauce over the baked flatbread. Dice the chicken and sprinkle over the flatbread. Top with the red onion, cucumber, tomatoes, feta, and arugula. Drizzle with the sriracha.
