If you're in a hurry, grab two of these, a piece of fruit and a small container of fat-free milk for a healthy, energy packed breakfast-to-go. These ready-in-a-half hour cookies mimic store-bought energy or granola bars, with their dried fruit and spice, and are great snacks and also delicious as finishes to almost any meal as a simple, wholesome dessert. Experiment baking these cookies with different types of dried fruit. Coconut strips and golden raisins are great in them, as are dried peaches and dates. If nuts are a part of your diet, you could add pistachios or cashews as fruity-flavored nuts that are as dense and meaty as dried fruit.

White self-rising flour

Ground cinnamon

Ground nutmeg

1 tsp

Unpacked brown sugar

1 Tbsp

Dried apricot halves

6 halves, chopped

Dried apple(s)

¼ cup(s), chopped

Raisins

¾ oz

Olive oil

1 tsp

Egg(s)

2 large egg(s), lightly beaten

Fat free skim milk

¼ cup(s)

Instructions

  1. Preheat oven to 400F. Coat a nonstick baking sheet with cooking spray.
  2. Sift dry ingredients into a bowl and stir in dried fruit.
  3. Stir in oil, eggs and milk until well-combined.
  4. Place tablespoons of mixture onto baking sheet and bake in oven for about 10 minutes.
  5. Serving size: 1 cookie
