If you're in a hurry, grab two of these, a piece of fruit and a small container of yogurt for a healthy, energy packed breakfast-to-go. Experiment baking these cookies with different types of dried fruit such as golden raisins, dried peaches, and dates. Add some chopped nuts, if desired.

Ingredients

White self-rising flour

1 cup(s)

Ground cinnamon

1 tsp

Ground nutmeg

1 tsp

Unpacked brown sugar

1 Tbsp

Dried apricot halves

6 half/halves, chopped

Dried apple

¼ cup(s), chopped

Raisins

¼ cup(s), chopped

Olive oil

1 tsp

Egg

2 large egg(s), lightly beaten

Fat free skim milk

¼ cup(s)

Instructions

  1. Preheat oven to 400F. Coat a nonstick baking sheet with cooking spray.
  2. Sift dry ingredients into a bowl and stir in dried fruit.
  3. Stir in oil, eggs and milk until well-combined.
  4. Place tablespoons of mixture onto baking sheet and bake in oven for about 10 minutes.
  5. Serving size: 1 cookie
