Take advantage of the abundance of strawberries this summer with our frozen fruit mousse. Mousse can be a labor of love - kind of intimidating to prepare. Not this one! Take a quick 15 minutes to whir fruit with a soy-based cream cheese and a light whipped topping and then pop the mix into the freezer and voila! A frozen dessert in minutes that is a sure-fire crowd pleasing treat. Use berries at the peak of their ripeness for the sweetest, most flavorful dessert.

Ingredients

Strawberries

2 cup(s), hulled and halved, frozen

Pineapple

3 cup(s), chopped, frozen

Banana

1 large, chopped, frozen

Soy cream cheese

½ cup(s), also known as tofu cream cheese

Light aerosol whipped cream

1 cup(s)

Instructions

  1. Put strawberries, pineapple and banana into a food processor and pulse until puréed. Add soy cream cheese and purée. Add whipped topping and pulse just until incorporated.
  2. Pour into an 8-inch square pan and freeze until firm, about 2 hours.
  3. Remove from freezer about 15 minutes before serving and cut into 8 pieces.

Notes

Make sure the berries are at their peak of ripeness for the sweetest, most flavorful dessert.
