Frozen strawberry-pineapple mousse

Take a quick 15 minutes to whir fruit with a soy-based cream cheese and a light whipped topping and then pop the mix into the freezer and voila! A frozen dessert in minutes that is a sure-fire crowd pleasing treat. Use berries at the peak of their ripeness for the sweetest, most flavorful dessert.
2 cup(s), hulled and halved, frozen
3 cup(s), chopped, frozen
1 large, chopped, frozen
Soy cream cheese
½ cup(s), also known as tofu cream cheese
Lite whipped topping
- Put strawberries, pineapple and banana into a food processor and pulse until puréed. Add soy cream cheese and purée. Add whipped topping and pulse just until incorporated.
- Pour into an 8-inch square pan and freeze until firm, about 2 hours.
- Remove from freezer about 15 minutes before serving and cut into 8 pieces.
Make sure the berries are at their peak of ripeness for the sweetest, most flavorful dessert.
