These fantastic frozen drinks are inspired by Italy. Serve them at your next cocktail party or happy hour gathering with some Italian cheeses, melon and prosciutto. Bellinis are an eye-catching cocktail, with their sunset peachy color and fresh peach garnish. Serve the drinks in stemware that's as beautiful as its content. Prosecco is Italy's version of Champagne, and it's far less pricey. While Italian bubbly is perfect for this light, summery cocktail, you could substitute Cava (Spanish) or a Crémant (a French sparkling wine from a region outside Champagne, such as the Loire or Bourgogne) or a sparkling wine from California with similar results.

Ingredients

Fresh lemon juice

1 Tbsp

Sugar

1 Tbsp

Unsweetened frozen peaches

16 oz

Prosecco

2½ cup(s), or champagne

Schnapps

2 fl oz, peach variety (1/3 cup)

Peach

1 small, sliced into 8 thin pieces

Instructions

  1. In a small microwaveable bowl, combine lemon juice and sugar; microwave until sugar dissolves, about 30 to 60 seconds. Let cool to room temperature.
  2. In a large blender, combine frozen peaches, prosecco or champagne, schnapps and sweetened lemon juice (let bubbles from prosecco settle before processing); process on high until smooth.
  3. Pour into 8 glasses and garnish each with a fresh peach slice.
  4. Serving size: a 4 1/2 fl oz cocktail

Notes

Make this recipe in two batches if you have a small blender. Or halve recipe for 4 servings total.
