This fork-and-knife open-face sandwich is easy to customize. Try sliced hard-boiled eggs and your favorite whole grain bread or scrambled eggs and a tortilla.

Light English muffin

Plain hummus

3 Tbsp

Tomato

Instructions

  1. Split and toast the muffin. Meanwhile, to cook the eggs, coat a large nonstick skillet with cooking spray and heat over medium. Crack the eggs into the pan; cover and cook to desired degree of doneness, 3 to 5 minutes.
  2. Spread 1 1/2 tbsp hummus on each muffin half. Top each with a tomato slice and an egg. Season to taste.
  3. Makes 1 serving.
