With all the veggies and bold herbs included in the salad, it requires little else. A simple dressing of olive and lemon tie all the flavors together.


Ingredients
Cucumber
½ medium, sliced into half moons
Red onion
¼ small, thinly sliced
Grape tomatoes
4 item(s), halved
Light mozzarella string cheese
1 stick(s), roughly chopped
Fresh lemon juice
1 Tbsp
Olive oil
1 tsp, extra virgin
Table salt
1 pinch(es), or to taste
Fresh basil
1 Tbsp, leaves
Fresh mint leaves
1 Tbsp, or parsley
Avocado
¼ cup(s), chopped
Unsalted dry roasted pumpkin seed kernels

Instructions

Toss the vegetables and cheese with the lemon juice, oil, and a dash of salt.

Gently stir in the herbs and avocado. Garnish with the pumpkin seeds.
