Nothing spells summer like fresh cherries. Here, they’re layered into parfaits for a lovely end to almost any meal off the grill. Cherries and almond are a natural pair, and letting the fruit soak with the sugar and salt is a necessary step in order to create that delectable sweet-tart cherry juice that will soak down prettily in the glass. Parfaits are typically served in tall glasses and involve multiple layers of fruit, cream and often liqueur. We've scaled down the French original, calling for only two layers, but you could still alternate them twice for the dessert's signature striped appeal. Top with toasted sliced almonds as an extra indulgence.

Sugar

Almond extract

Plain fat free Greek yogurt

Instructions

  1. Combine cherries, sugar, almond extract and salt in a bowl; set aside at room temperature so cherries release some of their juice, about 15 minutes.
  2. Mix yogurt and honey in a second bowl. Layer yogurt mixture and cherries in parfait glasses or white-wine glasses.
