Crunchy walnuts lend banana bread vibes to this easy pancake breakfast. Since these pancakes contain no flour or other grain-based binder, they’re naturally gluten-free. The batter spreads out in the pan to form thin pancakes that are crispy on the outside and creamy within.

In a medium bowl, mash 1 1⁄2 bananas; slice the remaining banana and set aside for serving. Into the bowl with the mashed bananas, add the eggs and baking powder, and whisk until blended.

Coat a large nonstick skillet with cooking spray; heat over medium heat. Into the skillet, spoon a scant 1/4 cup batter per pancake to make 4 pancakes. Cook until the edges are set and the bottoms are golden, about 1 minute. Carefully flip the pancakes with a thin spatula and cook on the other side until bottoms are golden, about 1 minute. Set aside and repeat with the remaining batter to make 8 pancakes.

Serve pancakes topped with reserved sliced bananas, strawberries, syrup, and walnuts.
