This recipe uses lean flank steak and a Greek seasoning blend to create an easy homemade version of a takeout favorite.

Ingredients

Cooking spray

4 spray(s)

Red onion

1 cup(s), sliced, very thin

Table salt

¼ tsp

Uncooked lean and trimmed beef flank steak

1 pound(s), very thinly sliced against the grain

Dried seasoning mix

1 tsp, Greek variety

Whole wheat pita

4 pita(s), or multigrain

Tomato

8 slice(s)

Tzatziki

4 Tbsp

Lettuce

8 leaf/leaves, large

Instructions

  1. In a small bowl, toss together the onion and salt; let stand for at least 5 minutes.
  2. Meanwhile, in a medium bowl, combine the steak and Greek seasoning, tossing until the steak is well coated. Coat a large nonstick skillet with cooking spray and heat over medium-high. Add the steak mixture to the pan; cook until the steak is browned, about 5 minutes, tossing and stirring frequently.
  3. Using a sharp paring knife, split the pitas in half, cutting about two-thirds of the way through so that the bread is hinged. Divide the steak, onion, tomato, tzatziki, and lettuce evenly among the pitas.
  4. Serving size: 1 gyro

Notes

To get super-thin onion slices in a flash, use a vegetable peeler (preferably a Y peeler) to shave off slivers. Salting them wilts them a bit and gives them an almost cooked texture while preserving their pungency.
