This is a super-fast wrap that is ideal for a lunchbox on the fly. It utilizes five-spice flavored tofu, or you could spice up tofu to your own taste by adding your seasonings of choice to the quick skillet stir fry before rolling. We like a shake of Chinese five spice or red chili pepper flakes, but you could also toss in some fresh chopped chives and cilantro, and stir until wilted. Look for tofu that has been curded with calcium sulfate. A 3-ounce serving will supply more than half of your daily requirement of calcium. Pack a little soy sauce or a seasoned rice vinegar in your lunch, too. You'll be happy to have it for a dipping sauce in a pinch.

Ingredients

Firm tofu

12 oz, regular or five-spice, cut into four 1/2-inch slabs

Flour tortilla

4 tortilla(s), medium

Tomato

1 medium, chopped

Cucumber

1 medium, peeled, seeded and chopped

Instructions

  1. Spray a large nonstick skillet or grill pan with garlic-flavored nonstick cooking spray; heat. Cook tofu until browned, about 4 minutes on each side.
  2. Heat tortillas according to package directions. Place tofu in center of each and sprinkle with tomato and cucumber; roll up burrito-style.
