Five-spice pork tenderloin with ginger plums

Exotic five-spice powder gives this pork dish an Asian accent that is boosted by a homemade skillet sauce that mimics Chinese sweet and sour sauce, but with a lighter, deeper flavor replacing the usual syrupy sweet strip mall restaurant version. Despite its originality, this recipe comes together quickly, and you can have an exotic feast on the table in just over a half hour. Steam some rice and add some broccoli or green beans to the stovetop or microwave while the pork is cooking. You'll want something to sop up the delectable sauce. Allowing the pork to stand for an extra 5 minutes just out of the oven will seal in its juices and prevent the meat from drying. Add any pan juices from cooking and cutting the meat to your skillet of sauce and stir to mix well, then spoon it over the sliced pork.
Ingredients
Uncooked lean pork tenderloin
1 pound(s), trimmed
Five-spice powder
1¼ tsp
Table salt
½ tsp
Canola oil
2 tsp
Plum
4 item(s), small, ripe, pitted and thinly sliced
Less sodium soy sauce
1 Tbsp
Unseasoned rice vinegar
1 Tbsp, unseasoned
Honey
2 tsp
Fresh ginger
½ tsp, grated peeled fresh
Cooking spray

Preheat oven to 400°F. Spray medium roasting pan with nonstick spray.

Rub pork on all sides with five-spice powder and salt.

Heat oil in large skillet over medium-high heat. Add pork and cook, turning occasionally, until browned on all sides, about 8 minutes. Transfer pork to prepared baking pan. Do not wash skillet. Roast until instant-read thermometer inserted into center of pork registers 145°F, about 20 minutes. Let pork rest 5 minutes; then cut into 12 slices.

When pork is almost done, add plums, soy sauce, vinegar, honey, and ginger to same skillet and set over medium heat. Cook, stirring often, until plums are tender, about 4 minutes. Serve pork with plums.
