Chock-full of robust garlic flavor, this easy skillet dish uses just five simple ingredients. Enjoy it over cauliflower rice, or serve with quinoa or brown rice.

Ingredients

Extra virgin olive oil

1½ Tbsp

Uncooked shrimp

1 pound(s), large, peeled and deveined

Crushed red pepper flakes

½ tsp

Garlic

5 clove(s), minced

Baby spinach

Lemon zest

2 tsp

Kosher salt

Instructions

  1. Heat the oil in a large skillet over medium heat. Add the shrimp, pepper flakes, and garlic; cook, stirring frequently, until the shrimp is just cooked through, about 5 minutes.
  2. Gradually add the spinach, stirring to wilt the spinach before adding more. Stir in the lemon zest and salt. Serve with lemon wedges.
  3. Serving size: 1 cup
