Olives, roasted peppers and feta add great flavor to these burgers, and these lean patties give burger night a refreshing change of pace (and place). Ground chicken gets a welcome moisture lift with the addition of feta cheese, but be sure to keep an eye on the burgers so they aren't overcooked and dry. To amp up the Greek flavor, add a tablespoon of chopped capers to the olives and roasted red peppers before serving. They are the perfect Mediterranean stand-in for a classic dill pickle garnish. Serve with roasted rosemary potatoes, and complete your meal with our light Greek Salad.*

Ingredients

Uncooked ground chicken breast

1 pound(s)

Fresh oregano

1 Tbsp

Garlic powder

¼ tsp

Feta cheese

7 Tbsp, crumbled

Reduced calorie hamburger bun

Lettuce

1 cup(s), chopped, romaine, cut into thick strips

Roasted red peppers (packed in water)

cup(s), sliced

Olives

5 olive(s), small, black, sliced

Instructions

  1. Preheat grill or broiler.
  2. In a medium bowl, combine chicken, oregano, garlic powder and feta; divide mixture into four balls and then press them gently into patties.
  3. Grill or broil patties until internal temperature of burgers reaches 165°F, about 7 to 8 minutes per side.
  4. Serve each burger on a bun with 1/4 of lettuce, 1/4 of peppers and 1/4 of olives. Yields 1 burger per serving.
