Fennel lends a subtly sweet taste of licorice to our refreshing fall fruit salad. It's a sweet-meets-savory preparation that packs plenty of crunch. Fennel and orange are natural culinary companions - a flavor combination that is popular all across the Mediterranean. Adding apple and red onion gives the salad extra kick and color, and cinnamon ties it all up, for a festive side that offers a unique flavor and texture to your meal. Ingredients

Uncooked fennel bulb

1 medium, thinly sliced

Apple

3 medium, Macintosh and Gala preferred, diced

Orange

4 medium, sectioned and pits removed

Red onion

1 medium, thinly sliced

Frozen unsweetened orange juice concentrate

1 Tbsp, thawed

Table salt

½ tsp

Ground cinnamon

½ tsp

Lettuce

1 head(s), medium, Boston, torn

Instructions

  1. Combine all ingredients, except lettuce, in a large bowl. Toss with lettuce and serve. Yields about 1 1/3 cups per serving.
