Customize this easy breakfast or lunch wrap by swapping arugula for the spinach or roasted red pepper hummus for regular hummus. You can also add a pop of color and flavor with some quartered cherry tomatoes and/or some pickled red onions.

Egg

Plain hummus

2½ Tbsp

Whole-wheat tortilla

1 tortilla(s), medium, 8-inches

Baby spinach

1 cup(s), loosely packed

Table salt

Black pepper

Instructions

  1. Coat a small nonstick skillet with cooking spray and heat over medium. In a medium bowl, whisk together the eggs until well blended. Add the eggs to the pan; cook until scrambled, stirring frequently, 2 to 3 minutes.
  2. Spread hummus down middle of tortilla, top with spinach and eggs, season to taste, roll up, and slice in half.
  3. Makes 1 serving.
